Established to promote the vegetarian way of life, World Vegetarian Day is celebrated worldwide. It is a day when vegetarians come together to promote how being a vegetarian can enhance lives.

October 1st is the day for this celebration this year, and we’re so excited. To celebrate this day with our vegetarian readers, we’d love to share some great vegetarian recipes. Here are five delicious main courses that you can serve up to celebrate international vegetarian day.

Brothy Pasta with Chickpeas

A lot of vegetarian main dishes will include chickpea. It is not surprising as it adds a magic touch to most broths. You’ll need extra virgin olive oil, tomatoes, chickpeas, garlic, onions, and short pasta for this recipe.

You’ll also need kosher salt, pepper flakes, rosemary, parmesan, and black pepper. A great tip is to make sure that you cook the onion and garlic for a while till they are completely soft. This will bring out the flavours and make your tomato broth taste even better.

Smoky Tofu Tortillas

Smoky Tofu Tortillas are easy to prepare and very delicious. You’ll need about 10 minutes to prep for this meal and only use 15 minutes for cooking. How great is that? You’ll also need potatoes in this recipe, but you can use any cooked veggies that you have leftover in its place.

The ingredients are oil (Vegetable or olive), onions, romano peppers, cumin, paprika, and coriander. You’ll also need sugar, kidney beans, smoked tofu, and cherry tomatoes. While serving, you’ll need thick yoghurt, avocado, limes, and corn and wheat tortillas.

You’ll love how the tofu absorbs the deliciousness of the ingredients in this recipe.

Spanish Frittata with Herby Yogurt and Greens

Who doesn’t love frittatas? This is one meal that will have everyone asking for seconds. Potatoes can make this meal a mix between the Spanish tortilla and an Italian frittata, but they aren’t compulsory. You can add whatever leftover veggies you have at home and serve it with a crisp green salad.

Prep time for this meal is about 30 minutes, while the total time for preparation is 50 minutes. You’ll need full-fat Greek yoghurt, basil, parsley, mint, basil, and garlic. You’ll also need garlic, lemon juice, and kosher salt. Then eggs, olive oil, shallots, cooked potatoes, and spinach or kale.

Veggie Burgers with Zucchini and Corn

Veggie burgers are an excellent idea for the winter weather. So, feel free to make these gluten-free burgers as the main course. You’ll need about an hour for everything to be ready. The courgette, sweet corn, nutty millet, and creamy white beans will add a lovely flavour and texture that is impressive.

For this meal, the ingredients are onions, garlic, cornflour, courgette, white beans, frozen corn, and vegetable oil. You’ll also need cooked millet, basil, kosher salt, black pepper, mayonnaise, lime zest, and lime juice.

Then finally, white cheddar, hamburger buns, avocado, and green lettuce for serving. These burgers can last for up to 3 months if tightly covered and frozen.

Courgette “Noodles” with Eggplant and Tomatoes

This is one recipe where the bright courgette plays a beautiful part. Summer squash forms the base of this meal, along with cherry tomatoes and eggplant. It takes about 45 minutes to prepare, and you’ll love how each flavour balances the other out.

The ingredients are courgette, fresh lemon juice, honey, kosher salt, basil leaves, olive oil, garlic, and cherry tomatoes. You’ll also need Chinese eggplants, cured black olives, and fresh buffalo mozzarella.

The International Vegetarian Day may be gone but we can still honour it, and any of these lovely main courses can be served to celebrate. You can also save them for use on other special occasions. Who knows, you could even serve them up at your wedding.
